Mountain Water Decaf is a single estate coffee from the Finca La Laja farm, close to the small Mexican village of Huatusco, in the state of Veracruz. The farm has been run by the Sampieri family for three generations producing excellent arabicas with Rainforest Alliance and 4C certification.
The water used to extract the caffeine comes from the glaciers of the highest mountain in Mexico. The method used to extract the caffeine is known as “Mountain Water Process” or “MWP.” Immersing the arabica beans, Bourbon and Caturra, allows us to extract the caffeine naturally, maintaining the beans flavour, as the water passes through a filter. Here the caffeine is removed, and the mountain water returned to the eco system.
La Laja farm produces coffee on approximately 500 ha of land at 1,100 metre above sea level. The farm enjoys an average temperature range from 15-22 Degrees Celsius. This allows for fertile soil in a tropical climate with annual rainfall of 2000 ml. Ready to pick, the harvest can go from October/November through to April.
